Dish of the Week: Seared Zucchini and Squash Strips!

Ever in need of a fancy appetizer that’s easy to make or a healthy snack that’s also tasty? These seared zucchini and squash strips with crispy parmesan are the perfect combination of both! 

Ingredients:

  • Zucchini and/or squash cut into ½ inch strips
  • 3 tablespoons olive oil
  • 4 Tablespoons Unsalted butter
  • 2 ounces freshly grated parmesan cheese
  • 2 ounces freshly ground black pepper
  • Torn basil
  • Kosher salt 

Steps:

Heat the olive oil in a 12-inch cast-iron skillet on medium high heat until shimmering.

Salt both sides of the zucchini and/or squash, and place into the oil. Cook each side for 2-3 minutes, or until seared.

 

 

 

 

 

In a small saucepan, add the ground black pepper and heat on medium high heat until fragrant (about 2 minutes).

 

 

 

 

 

Add in the butter and stir until the foam subsides and the butter is melted completely.

 

 

 

 

 

Add the parmesan and stir continuously so that the cheese does not stick to the pan. Once the cheese is melted and crispy, remove from heat and stir for another minute or two.

 

 

 

 

 

Top the seared zucchini and/or squash slices with the cheese and basil, and add salt to taste.
